The story begins in 1947, when Kundan Lal Gujral, founder of the famous Moti Mahal restaurant, migrated from Peshawar to Delhi following Partition. In his new kitchen, faced with leftover tandoori chicken that had become dry, he improvised by simmering the pieces in a gravy of tomatoes, cream, and butter.

The result was transformative. The rich, velvety sauce perfectly complemented the smoky tandoori chicken, and a culinary legend was born. Gujral named his creation 'Murgh Makhani' - chicken in butter.
